Description

Exhibition: War menus. Avantguard cooking and survival

From Ignasi Domènech, and his book La Teca (1924) in the cooking workshops of Professor Rondissoni of the Institute of Women's Culture founded by Francesca Bonnemaison, through the magazines Menage and Claror, the exhibition reviews the great chefs of the moment, without forgetting the first steps of the vegetarian cuisine of Doctor Nicolás Capo and Ramona Perera, published in the naturist magazine Pentalfa, the initiatives of the hospitality sector such as the restaurants of Bar del Colom, Bar La Lune, El Saló Rosa, etc., or the great campaign 'The battle of the egg', promoted by the Generalitat de Catalunya in 1937 to address the shortage of this essential product.

But all this little history of innovation and gastronomic modernity was shattered by the military uprising, the Civil War and the subsequent dictatorship. Now, when our cuisine occupies a good place in the Olympus of catering, when our chefs are recognized and praised everywhere, and when all this is added to the UNESCO Candidacy 2014 to make Catalan Cuisine World Heritage Site, it is a good time to take a look at the past and recover part of a history, unknown to many but of paramount importance in understanding where we are today.

"War menus. Avant-garde cuisine and survival" has been produced by the Fundació Antigues Caixes Catalanes, BBVA and the Museum of the History of Catalonia.
